Bean to bar
The Bean to Bar is to chocolate, what specialty coffee is to coffee, or craft beers to beer; Coffee and beer have been made for centuries, but they have only recently been made well. This technique seeks to extract chocolate from large industries, and thus be able to discover the differences between cocoas from different countries, regions or plantations. In addition to recognizing a job well done from its cultivation to the tablet, since the entire chain is important to obtain high quality cocoa and later chocolate.
An exceptional chocolate that balances the subtle acidity of red fruits, such as currants, with notes of pipe tobacco and the roundness of roasted nuts.

THE COUNTRY AND THE REGION
Kilombero Valley, Morogoro Region, Tanzania Kilombero is bordered on one side by the Udzungwa Mountains, part of which is protected by a national park.
The founders of Kokoa Kamili were international development professionals who were frustrated with the top-down approach of many organizations. They decided that the most direct form of benefiting communities they work with would be to pay high prices for their products. Farmers could then decide for themselves how best to use this extra income. Farmers receive an average 25% more payment for their cocoa from Kokoa Kamili. Additionally, Kokoa Kamili distributes seedlings to farmers as donations or for a low cost and provides training to farmers to help increase the yields and quality of the cocoa they grow.
GENETICSCocoa has a long history in Tanzania, with the tree’s first introduction to the country likely taking place in the 1880s with several reintroductions in the last 150 years. The analyses carried out on the beans have shown that the beans are a mixture of classic Trinitario (Amelonado x Criollo), with the slight presence of Neo-Nacional.
