We roast every monday
All of our coffees come whole grain. We roast every Monday, therefore the coffee delivered to you will be from the week you order. This way we make sure that it reaches you as fresh as possible. We recommend that if the coffee is for a filter, it is left to rest for 2 to 4 days from the roast date and if it is for espresso 7 days.

The water decaffeination process is known for preserving the subtlety and the aromas and flavours of origin. And we must not forget that chemical solvents are not used for this.
A very simple process to carry out and at the same time understand:
- Green coffee is immersed in water that is supersaturated with soluble components of coffee except for caffeine. This extract is called GCE (Green Coffee Extract).
- The GCE flows around the coffee beans. Looking for balance in matter, caffeine migrates to the GCE.
- The GCE now contains caffeine but this does not last long, it is passed through a carbon filter where the caffeine molecules are trapped and the GCE is regenerated.
- This is repeated continuously for 10 hours (time, temperature and flow are monitored), the result is 99.9% caffeine free coffee.
Our specialty coffees are recognized for their taste and absence of defects.
All Kaitxo coffees are specialty coffees. What does that mean? The SCA (Specialty Coﬀee Association) establishes protocols to evaluate a coffee and consider it as a specialty coffee. Each coffee must exceed 80 points out of 100 to be a true Specialty Coﬀee.
