The Bean to Bar is to chocolate, what specialty coffee is to coffee, or craft beers to beer; Coffee and beer have been made for centuries, but they have only recently been made well. This technique seeks to extract chocolate from large industries, and thus be able to discover the differences between cocoas from different countries, regions or plantations. In addition to recognizing a job well done from its cultivation to the tablet, since the entire chain is important to obtain high quality cocoa and later chocolate.
The “El Castillero” cocoa consists of a blend of Trinitarios, fermented in cascading wooden boxes. They are pre-dried for 48 hours and then dried for approximately 7 days.
El Castillo is a small town located on the southern bank of the San Juan River, in southern Nicaragua, famous for the ruins of the old fortress ordered to be built by the Spanish crown in the 17th century.
