The Bean to Bar is to chocolate, what specialty coffee is to coffee, or craft beers to beer; Coffee and beer have been made for centuries, but they have only recently been made well. This technique seeks to extract chocolate from large industries, and thus be able to discover the differences between cocoas from different countries, regions or plantations. In addition to recognizing a job well done from its cultivation to the tablet, since the entire chain is important to obtain high quality cocoa and later chocolate.
Milk chocolate, in a version with a higher percentage of cocoa than usual, ideal for the most classic chocolate lovers. Peruvian cocoa, from the Piura region, specifically from Palo Blanco. It has cocoa butter, powdered milk, sugar and a pinch of salt to season. Creamy and with notes of toffee and spices.
